Abstract:The flow of high temperature (100 DEG C) of dry gentle Su combined drying Thai fragrant rice (Khao dawk Mali105, indica), make the moisture content down to 13-14% (wet basis), to facilitate safe storage. Study on the effect of drying and storage process of rice grain quality and aroma. Thailand fragrant rice needs to go through two stages of drying. The first stage is in a high temperature fluidized bed drying, tempering for 30 minutes, and then return to the high temperature fluidized bed drying or dried, until the moisture content decreased to safe storage levels. The experimental results show that the drying temperature of rice milled rice rate (HRY) and whiteness index (WI) and 2AP content were. Percentage of head milled rice most drying temperature levels are relatively low, but except for 150 DEG C, the head milled rice rate (P < 0.05) increased significantly. However, when a fluidization drying gentle after the Soviet Union, to dry in the shade instead of second fluidization drying, fragrant rice milled rice rate increased significantly, especially in 135 DEG and 50 DEG C (P < 0.05). During storage, the whiteness index and the content of 2AP decreased significantly (P < 0.05), while the milled rice rate remained unchanged. In contrast to the environment temperature (28-30 DEG C) and 15 DEG C storage temperature, the results showed that maintaining rice 2AP content and whiteness index appropriate storage temperature is 15 degrees. But the storage conditions of the milled rice rate had little effect (P0.05). The development of this research will be beneficial to the Thai fragrant rice industry, for the Thai fragrant rice drying play a guiding role.
