Abstract
In the winding history, food culture is an important part of national culture; the diversity and richness are the embodiments of different national creativity. Different geographical environment, economical development and cultural background of China and America lead to difference in Chinese and American food concept and its influence on dietetic cooking. Food concept is that food formed during the process of food production and consumption. In China, cooking is art; in America, cooking is labor. The differences of food concept make the Chinese diet artistic and emotional; the American diet tends to be more scientific and rational.
The constant communications between Chinese and American cultures are benefit to absorb essence and maintain exuberant vitality in the collision. Meanwhile, the study of influence on dietetic cooking from different food concept help Chinese food culture broadcasts and develops in the worldwide.
This article is divided into three chapters: the first part introduces comparisons between Chinese and American food cultures. The second part focuses on characteristics of Chinese and American food concepts. The third part presents influence on dietetic cooking from different food concept.

摘  要

在蜿蜒曲折的历史长河中,饮食文化是民族文化的重要组成部分,其多元化和丰富性正是不同民族创造性的体现。中美地理环境、经济发展和文化背景等的不同造就了中美饮食文化理念异同及其食物烹饪的不同作用。饮食理念即人们在食物的制作和食用过程中所形成的理念。在中国,烹饪是一种艺术;在美国,烹饪却是一种劳动。这种饮食理念的差别使得中国饮食倾向于艺术、感性;美国饮食更倾向科学、理性。
中美文化的不断交流有利于在碰撞中吸收精髓,英语论文,并且始终保持旺盛的生命力。与此同时,探讨中美饮食理念异同对其食物烹饪的作用英语毕业论文,将有利于促进中国饮食文化在全世界范围内的广泛传播和发展。
本文内容分为三个章节:第一章介绍中美饮食文化对比。第二章着重于阐述中美文化理念的特点。第三章介绍了不同饮食理念对其食物烹饪的作用。
