Abstract:
With the rapid development of national economy and international exchanges, an increasing number of foreign customers want to obtain a deeper understanding of Chinese culture, including food culture. Food culture represents different culinary art of different countries. It is one of the ways to show the historic and cultural features of a nation, including material culture and spiritual culture. Chinese food culture is world-famous for its long history and profoundness. Thus, translators should shoulder the responsibility dutifully to export Chinese food culture abroad. This thesis which is based on the cultural translation theory of Susan Bassnett studies the translation of Chinese cuisine. It focuses not only on the translation methods but also on the function of the cultural factors in translating . By comparing the different translations of Chinese dishes and analyzing them from a cultural perspective, it can be seen that culture plays an increasingly important role in translation and translators should pay much more attention to the cultural factors in dealing with translation problems.

1. Introduction
China's food culture has attracted more and more foreigners to taste Chinese food and learn Chinese diet culture. So the names of dishes, as an indispensable part of Chinese food culture, play a significant role in exporting Chinese food culture. As the name of a dish provides the customer the information of the dish, the translation should be informative and precise to stimulate their appetites. The names of Chinese dishes usually contain profound cultural connotation and the naming style is different from that of Western, translators should take efforts to convey the accurate information of the names of dishes to foreigners.
